BUFFALO LEMON PEPPER CHICKEN WINGS

WHAT YOU NEED

  • Pre-cut chicken wings (1 pound per person)
  • ANCHOR SEASONING WING RUB
  • Cornstarch Powder (optional)
  • Baking sheet 
  • Paper towels for drying wings


INSTRUCTIONS

  1. Place a layer of paper towels on the baking sheet. Add the wings to the baking sheet and place another layer of paper towels on top of the wings to dry. Applying pressure to the wings in order to dry as best as you can, repeat this step as necessary. Having dry wings prior to cooking helps create a crispy and delicious finished product.
  2. Season generously with ANCHOR SEASONING WING RUB - let the seasoning rest on the wings for 20 minutes prior to cooking. Add another layer of seasoning on the wings before placing on the grill (second coat).
  3. Optional: If you’d like to get the wings even crispier, add 1 Tbsp of cornstarch powder in a bowl with the WING RUB prior to the first coat of seasoning.
  4. While the WING RUB sets, preheat grill to 275°F 
  5. Place the wings directly on the grates for 45 minutes (flipping mid-way through). You’re looking for an internal temp of 175°F 
  6. Once your wings reach 175°F internal, increase the grill's temperature to 325-350°F and cook for another 15 minutes.
  7. Remove wings from heat and give a light dusting of ANCHOR SEASONING WING RUB to enhance the final flavor.
